1 1/2 cups | 93g / 3.3oz | Flour |
2 tablespoons | 30ml | Baking powder |
1/2 teaspoon | 2.5ml | Salt |
1 cup | 237ml | Milk |
1/2 cup | 118ml | Vegetable oil |
Sweet and Sour Sauce | ||
1 | Carrot sliced thin | |
2 | Scallions 1 " pieces | |
1 cup | 237ml | Pineapple chunks |
1/2 cup | 99g / 3.5oz | Sugar |
1/2 cup | 118ml | Pineapple juice |
1/2 | Green pepper diced | |
2 tablespoons | 30ml | Cornstarch |
1/2 cup | 118ml | Cold water |
Dip chunks of chicken or fish in batter and fry in hot oil until golden. Drain and set aside.
For the sauce combine all ingredients except peppers, cornstarch and water.
Bring to a boil, lower heat and simmer 10 minutes.
Add green pepper and simmer 2 more minutes.
Combine water and cornstarch and thicken mixture stirring well.
Pour over chicken or fish.
Serve with rice.
