1/2 lb | 227g / 8oz | Italian sausage or chorizo* |
1 | Onion - finely chopped | |
1 | Garlic - finely chopped | |
1 | Celery - finely chopped | |
1/2 cup | 118ml | Dry sherry |
1 cup | 146g / 5.1oz | Seasoned bread crumbs |
*Use turkey sausage to cut fat, if desired.
Remove stems from mushrooms. Remove sausage from casings (or use bulk sausage) and mix with onion, garlic and celery. Cook in a skillet with the sherry until the sausage is cooked and vegetables are softened. Add bread crumbs and mix well. Stuff mushrooms with the sausage mixture. This can be done up to 4 hours in advance; store in the refrigerator.
Heat oven to 350F. Coat a baking sheet with cooking spray and arrange mushrooms on the sheet. Bake for about 30 minutes, until lightly browned.
