Spicy Tomato Soup Recipe - Cooking Index
30 oz | 852g | Stewed tomatoes |
5 oz | 142g | Tofu - sliced |
3 cups | 711ml | Coconut milk |
1 tablespoon | 15ml | Red curry paste |
2 tablespoons | 30ml | Soy sauce |
1 tablespoon | 15ml | Lemon juice |
Garnish | ||
2 tablespoons | 30ml | Cilantro leaves - chopped |
Puree the tomatoes. Set aside. Puree the tofu and the coconut milk. Mix all the ingredients together in a soup pot. Bring to a boil, lower heat and simmer for 10 minutes. Garnish with cilantro.
