Spicy Barbecued Cashews Recipe - Cooking Index
1/4 cup | 82g / 2.9oz | Corn syrup |
2 tablespoons | 30ml | - water |
2 teaspoons | 10ml | Salt - coarse |
2 teaspoons | 10ml | Cumin - ground |
1 teaspoon | 5ml | Curry powder |
1 teaspoon | 5ml | Cayenne pepper |
1 lb | 454g / 16oz | Cashews - raw, unsalted |
"For a not-so-spicy version, use half the amount of curry powder and cayenne, Raw, unsalted cashews are available at bulk and health food stores. I like to give these away in 1/2 cup amounts in little plastic bags tied with attractive ribbons. Be sure to label them "spicy"."
In medium saucepan, combine corn syrup with water and spices. Bring to a boil. Stir in the nuts. Spread on cookie sheet lined with aluminum foil and bake 1 hour at 275F. Stir every 20 minutes. Remove from oven and cool 20 minutes.
