Recipe Ingredients

1 cup 62g / 2.2ozOnion - peeled and chopped (large)
1   Garlic - crushed
6   Hard-cooked eggs - peeled and chopped
1   Apple - cored and chopped
5   Lemon juice
250   Sour cream
1   Salt
1   Pepper
30   Fresh dill or parsley - chopped
6   Pickled herring - drained

Recipe Instructions

1. Cut herring into small cubes. Mix herring with onion, eggs, apple, and lemon juice.

2. Combine sour cream, garlic, salt and pepper; add to herring mixture and mix well. Sprinkle with dill or parsley.

3. Serve with rye bread.

Author's Notes: This recipe could be used as part of a 12 course meal known in Polish as Wigilia, or on its own. Wigilia is eaten after sundown on Christmas Eve.
