1 cup | 62g / 2.2oz | Onion - peeled and chopped (large) |
1 | Garlic - crushed | |
6 | Hard-cooked eggs - peeled and chopped | |
1 | Apple - cored and chopped | |
5 | Lemon juice | |
250 | Sour cream | |
1 | Salt | |
1 | Pepper | |
30 | Fresh dill or parsley - chopped | |
6 | Pickled herring - drained |
1. Cut herring into small cubes. Mix herring with onion, eggs, apple, and lemon juice.
2. Combine sour cream, garlic, salt and pepper; add to herring mixture and mix well. Sprinkle with dill or parsley.
3. Serve with rye bread.
Author's Notes: This recipe could be used as part of a 12 course meal known in Polish as Wigilia, or on its own. Wigilia is eaten after sundown on Christmas Eve.
