Braised Leeks & Green Beans Recipe - Cooking Index
| 1/2 cup | 118ml | Sherry |
| 1 teaspoon | 5ml | Olive oil |
| 5 cups | 1185ml | Leeks - well washed |
| 1 cup | 237ml | Wild mushrooms - sliced |
| 2 cups | 320g / 11oz | Green beans - cut into |
| 1/3 | Lengths | |
| 1 teaspoon | 5ml | Orange juice |
| 1/2 teaspoon | 2.5ml | Orange peel - grated |
| 1 tablespoon | 15ml | Cider vinegar |
| Salt & pepper |
In a large skillet, heat sherry & oil over medium high heat. Add leeks & cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute until the mushrooms begin to exude moisture, about 5 minutes. Stir in the remaining ingredients & remove from heat. Serve warm.
