1 | Herring 2lb. Scaled boned and - cut into 1" diagonal | |
1 cup | 237ml | Water |
2 cups | 474ml | Cider vinegar |
3/4 cup | 148g / 5.2oz | Sugar |
5 | Dried hot peppers | |
5 | Bay leaves | |
2/3 cup | 97g / 3.4oz | Black olives pitted chopped |
2 teaspoons | 10ml | Coriander seeds |
1 1/2 teaspoons | 7.5ml | Mustard seeds |
1 | Carrot lg. Scraped cut into - 1/8" thick rounds | |
1 | Onion lg. Sliced thin | |
30 | Black peppercorns |
Bring the water, vinegar, and sugar to a boil. Cook until sugar is dissolved.
Remove from heat and set aside. In 2 large Mason jars layer the remaining ingredients.
Be sure to distribute the spices evenly throughout the layers. Pour the marinade evenly over the contents of each jar.
Screw the lids on tightly, place into the refrigerator for 5-7 days.
