Seafood Rice Salad Recipe - Cooking Index
| 8 oz | 227g | Medium fresh shrimp - cooked and peeled |
| 6 1/2 oz | 184g | Tuna in water - drained |
| 3 cups | 480g / 16oz | Cooked rice - cooled |
| 1/2 cup | 31g / 1.1oz | Onions - finely chopped |
| 1/2 cup | 73g / 2.6oz | Sweet pickles - finely chopped |
| 1 1/2 cups | 165g / 5.8oz | Celery - thinly sliced |
| 1/4 cup | 36g / 1.3oz | Pimiento - diced |
| 3 | Hard-boiled eggs - chopped whites only | |
| 1 tablespoon | 15ml | Lemon juice |
| 1 cup | 237ml | Light mayonnaise |
Combine all ingredients and toss lightly. Season to taste.
Chill, Serve on salad greens and garnish with tomato wedges if desired
