Seafood Rice Salad

Recipe Ingredients

8 oz 227gMedium fresh shrimp - cooked and peeled
6 1/2 oz 184gTuna in water - drained
3 cups 480g / 16ozCooked rice - cooled
1/2 cup 31g / 1.1ozOnions - finely chopped
1/2 cup 73g / 2.6ozSweet pickles - finely chopped
1 1/2 cups 165g / 5.8ozCelery - thinly sliced
1/4 cup 36g / 1.3ozPimiento - diced
3   Hard-boiled eggs - chopped whites only
1 tablespoon 15mlLemon juice
1 cup 237mlLight mayonnaise

Recipe Instructions

Combine all ingredients and toss lightly. Season to taste.

Chill, Serve on salad greens and garnish with tomato wedges if desired
