Sausage Appetizers Recipe - Cooking Index
1 | Refrigerated butterflake rolls | |
1/2 lb | 227g / 8oz | Hot sausage - crumbled |
2 | Eggs - slightly beaten | |
1 cup | 146g / 5.1oz | Cottage cheese |
1 tablespoon | 15ml | Snipped chives |
1 | Freshly ground black pepper | |
1/4 cup | 36g / 1.3oz | Grated parmesan cheese |
Preheat oven to 375F. Generously grease muffin tins.
Separate rolls, press each piece to between 1/8- and 1/4-inch thick and fit into muffin cups. Brown sausage, drain well and spoon over dough. Mix eggs, cottage cheese, chives and pepper. Stir in Parmesan. Spoon over sausage and bake about 20 minutes or until filling is lightly browned. Can be made ahead and frozen before or after baking.
Note: I used more than one package of rolls to get 48 muffins. You have to use about 1/4 of a roll for each muffin cup.
