Romaine With Avocado, Radish and Orange

Recipe Ingredients

3 tablespoons 45mlLime juice
2 tablespoons 30mlOrange marmalade
3 tablespoons 45mlAvocado oil
  Salt and pepper
3 tablespoons 45mlHot water
2   Romaine - shredded
12   Radishes - thinly sliced
2   Seedless oranges - peeled and
  Thinly sliced
1   Avocado (small)

Recipe Instructions

Combine lime juice, marmalade, oil, salt and pepper in a blender and process until creamy. With the machine running, slowly add the water and process until creamy. Set aside.

Line a shallow bowl with lettuce. Alternate circles of radish and orange slices over the top. Cover and refrigerate.

At serving time, peel, pit and cut avocado into 1/2" dice. Add to the top of the salad and drizzle with dressing. Serve immediately, as is or tossed.
