Rice Stuffed Mushrooms

Recipe Ingredients

24   Fresh mushrooms (large)
1 tablespoon 15mlChili sauce
3 tablespoons 45mlMinced onion
1 tablespoon 15mlLemon juice
1 tablespoon 15mlButter or margarine
1 teaspoon 5mlSalt
1 cup 160g / 5.6ozCooked extra long grain rice
1/4 teaspoon 1.3mlGround black pepper
1/2 cup 31g / 1.1ozFinely chopped nut meats
1/4 cup 49g / 1.7ozMelted butter

Recipe Instructions

Remove stems, wash and dry mushrooms.

In small skillet, cook onion in butter until tender, but not brown.

Add remaining ingredients except for melted butter.

Press rice mixture into each mushroom cavity. Place mushroom caps on rack in broiler.

Drizzle with melted butter and broil until golden brown.

Makes 24 mushrooms (2 per person).
