Rhode Island Clam Cakes

Recipe Ingredients

4 cups 250g / 8.8ozFlour
8 teaspoons 40mlBaking powder
3 teaspoons 15mlSalt
1 teaspoon 5mlPepper
4   Eggs
2 cups 474mlMilk
1   Clams - canned with liquid
2 cups 396g / 13ozLard - or more, for deep frying

Recipe Instructions

Mix all of above (except lard).

Deep fry at 375 by dropping from oiled spoon.

Salt and pepper after cooking.
