Pickled Raw Vegetables

Recipe Ingredients

1 teaspoon 5mlSlightly crushed dill seed
1/4 cup 59mlCider vinegar
1 teaspoon 5mlSalt
1 teaspoon 5mlSugar
1   Hot pepper sauce**
1 cup 237mlWater
2 cups 474mlRaw vegetables cut up*
2 tablespoons 30mlFinely chopped pimento

Recipe Instructions

* Such as cauliflorlets, radish slices, carrot curls, green pepper chunks etc.

** Can add fresh hot peppers for more bite to the vegetables.

Combine first 6 ingredients in sauce pan. Bring to boil.

Pour over vegetables. Cool, add pimento, chill about 24 hours.

Drain, store covered in refrigerator.
