Peanut Rice Salad Recipe - Cooking Index
3/4 cup | 120g / 4.2oz | Long grain and wild rice |
1/2 cup | 118ml | Light Italian salad dressing |
1/4 cup | 59ml | Plain yogurt |
1 cup | 110g / 3.9oz | Celery - sliced |
1 cup | 62g / 2.2oz | Tomato - cubed |
1/2 cup | 73g / 2.6oz | Cucumber - diced |
2 tablespoons | 30ml | Parsley - chopped |
1/8 teaspoon | 0.6ml | Seasoned salt |
1/8 teaspoon | 0.6ml | Pepper |
1/4 cup | 36g / 1.3oz | Peanuts - dry-roasted unsalted, chopped |
Cook rice as directed on package. omitting butter or margarine. Cool.
Toss lightly with next 8 ingredients. Cover: chill. Serve in lettuce lined bowl, Garnish with peanuts.
