Cranberry Chutney | ||
1 cup | 93g / 3.3oz | Cranberries |
1/4 cup | 40g / 1.4oz | Packed brown sugar |
2 tablespoons | 30ml | Green onion - chopped |
2 teaspoons | 10ml | Lime juice |
1 teaspoon | 5ml | Pickled jalapeno - chopped |
Salt | ||
Pepper | ||
Toasted pecan halves - (optl) |
Cranberry Chutney:
In saucepan, bring cranberries, sugar and 1 tbs water to boil; reduce heat and simmer, uncovered, for 5 minutes. Add onion, lime juice, jalapeno, and salt and pepper to taste. Let cool slightly (Can be covered and refrigerated for up to 3 days.) Place Brie on ovenproof serving dish. Spoon chutney over top. Bake in 350F 180C oven for 10-15 minutes or until cheese is just starting to melt.
Garnish with pecan halves (if using). Fresh berries may also be used to garnish.
