Papaya and Vegetable Salsa

Recipe Ingredients

1   Papaya; peeled - seeded, - finely (large) chopped
1 cup 62g / 2.2ozSeeded tomatoes - - (finely chopped)
1/2 cup 73g / 2.6ozPeeled seeded cucumber - - (finely chopped)
1/4 cup 15g / 0.5ozFinely chopped green onion
3 tablespoons 45mlFresh lime juice
1 tablespoon 15mlChopped fresh cilantro
1 tablespoon 15mlSeeded jalapeno chili - - (finely chopped)
  Low-fat tortilla chips

Recipe Instructions

Here's a pretty and fresh-tasting salsa that is great with low-fat tortilla chips. Celery sticks and bell pepper strips also make good, healthful "scoops".

Combine first 7 ingredients in medium bowl. Season to taste with salt and pepper. (Can be prepared 4 hours ahead. Cover and refrigerate.) Let stand at room temperature 30 minutes before serving. Serve with tortilla chips.
