Oysters Rockefeller - 2

Recipe Ingredients

36   Oysters - on half shell (medium)
1 teaspoon 5mlSalt
2 cups 474mlCooked spinach
6   Tabasco sauce
1/4 cup 15g / 0.5ozChopped onion
6 tablespoons 90mlButter - melted
1/2 cup 73g / 2.6ozBread crumbs
2 teaspoons 10mlAnisette
2 tablespoons 30mlCooked - chopped bacon
1 tablespoon 15mlChopped fresh parsley

Recipe Instructions

Preheat the oven to 375F. Combine the spinach, onions, bread crumbs, bacon, parsley, salt and Tabasco. Put the mixture through a food grinder. Stir in the butter and anisette.

Spread this mixture over the oysters. Fill a baking pan large enough to hold all the oysters with a deep layer (1/4") of rock salt.

Embed the oysters, shell down, in the rock salt. Bake for 10 minutes. Run the pan under the broiler to brown. Serve piping hot.
