Oysters Rockefeller - 2 Recipe - Cooking Index

| 1 teaspoon | 5ml | Salt |
| 2 cups | 474ml | Cooked spinach |
| 6 | Tabasco sauce | |
| 1/4 cup | 15g / 0.5oz | Chopped onion |
| 6 tablespoons | 90ml | Butter - melted |
| 1/2 cup | 73g / 2.6oz | Bread crumbs |
| 2 teaspoons | 10ml | Anisette |
| 2 tablespoons | 30ml | Cooked - chopped bacon |
| 1 tablespoon | 15ml | Chopped fresh parsley |
Preheat the oven to 375F. Combine the spinach, onions, bread crumbs, bacon, parsley, salt and Tabasco. Put the mixture through a food grinder. Stir in the butter and anisette.
Spread this mixture over the oysters. Fill a baking pan large enough to hold all the oysters with a deep layer (1/4") of rock salt.
Embed the oysters, shell down, in the rock salt. Bake for 10 minutes. Run the pan under the broiler to brown. Serve piping hot.
