Recipe Ingredients

24   Fresh oysters - on half shell
1/4 cup 27g / 1ozChopped white celery
1/2 cup 99g / 3.5ozSweet butter
1   Lemon
1/3 cup 48g / 1.7ozFinely chopped shallots
1/2 teaspoon 2.5mlChopped pimiento
1/4 cup 36g / 1.3ozFinely chopped fresh parsley
12   Bacon
1/4 cup 36g / 1.3ozChopped green bell pepper

Recipe Instructions

Preheat the oven to 450F.

Fill a baking pan large enough to hold all the oysters with a deep (1/4") layer of rock salt.

Embed the oysters, shell side down, in the rock salt. Remove the membranes and seeds from the green pepper before chopping.

Combine the shallots, parsley, green pepper and celery. Squeeze all the juice from the lemon into the mixture.

Thoroughly cream the mixture. Put a piece of the mixture on each oyster. The bacon should be only half cooked.

Place 1/2 teaspoon of pimento and a piece of bacon on each oyster on top of the butter mixture. Bake until the bacon is browned (5 to 8 minutes).
