Onion Soup (La Fitte) Recipe - Cooking Index
3 tablespoons | 45ml | Butter |
5 tablespoons | 75ml | Onions - sliced thin (medium) |
6 cups | 1422ml | Bouillon |
1/2 teaspoon | 2.5ml | Salt |
1/2 cup | 118ml | Sauterne wine |
1/8 teaspoon | 0.6ml | Cayenne pepper |
1/8 teaspoon | 0.6ml | Black pepper |
Toast rounds | ||
1/4 cup | 59ml | Grated Swiss or muenster. |
Melt butter in large saucepan. Add onions and cook, stirring frequently, until golden brown. Add wine and cook additional 5 minutes.
Add bouillon, salt cayenne and black pepper and bring to a boil. Cover and simmer for 15 minutes. Pour into 6 soup bowls and place toast round in each.
Sprinkle with grated cheese and serve.
