Onion Soup (La Fitte)

Recipe Ingredients

3 tablespoons 45mlButter
5 tablespoons 75mlOnions - sliced thin (medium)
6 cups 1422mlBouillon
1/2 teaspoon 2.5mlSalt
1/2 cup 118mlSauterne wine
1/8 teaspoon 0.6mlCayenne pepper
1/8 teaspoon 0.6mlBlack pepper
  Toast rounds
1/4 cup 59mlGrated Swiss or muenster.

Recipe Instructions

Melt butter in large saucepan. Add onions and cook, stirring frequently, until golden brown. Add wine and cook additional 5 minutes.

Add bouillon, salt cayenne and black pepper and bring to a boil. Cover and simmer for 15 minutes. Pour into 6 soup bowls and place toast round in each.

Sprinkle with grated cheese and serve.
