Olive Laced Baba Ganoush Recipe - Cooking Index
2 cups | 474ml | Baba ganoush* |
1 cup | 237ml | Black Greek olives - pitted and |
Finely chopped | ||
1 teaspoon | 5ml | Zahter** |
Olive oil | ||
Parsley - chopped | ||
Pita wedges |

Put baba ganoush in a bowl and fold in chopped olives and zahter.
Blend thoroughly and adjust seasonings if necessary. Cover and refrigerate. Before serving, drizzle with olive oil and garnish with parsley. Serve with pita wedges.
** Zahter is a Middle Eastern blend of marjoram, thyme, sesame seeds and sumac seeds found in good Middle Eastern grocery stores. Substitute if you want by using the following blend: 1 tsp toasted sesame seeds, powdered marjoram, powdered thyme, freshly grated lemon rind and some salt.
