Old Kentucky Beer Cheese Recipe - Cooking Index
2 lbs | 908g / 32oz | Sharp cheddar cheese |
2 | Garlic - mashed | |
3 tablespoons | 45ml | Worcestershire sauce |
1 teaspoon | 5ml | Dry mustard |
Tabasco sauce - to taste | ||
1/2 | Beer | |
1 teaspoon | 5ml | Salt |
Have the cheese at room temperature.
Cut the cheese into 1 inch cubes and place them in a food processor or electric mixer bowl.
Process until perfectly smooth.
Add the garlic, Worcestershire, mustard and Tabasco. Blend well.
Add the beer, a little at a time, while continuing to beat the mixture until it is of a good, firm spreading consistency.
Stir in the salt and refrigerate.
Serve with slices of cocktail rye bread.
