Okra And Tomatoes Recipe - Cooking Index
4 tablespoons | 60ml | Bacon grease or oil |
2 lbs | 908g / 32oz | Fresh okra - sliced thin |
2 cups | 125g / 4.4oz | Peeled and chopped tomatoes |
1 cup | 62g / 2.2oz | Onion - chopped (large) |
1 teaspoon | 5ml | Fresh lemon juice |
1 tablespoon | 15ml | Worcestershire sauce |
1 | Bell pepper - chopped fine | |
1 | Dried Tabasco pepper - crushed | |
6 | Garlic - minced fine | |
1 1/2 cups | 355ml | Water |
Salt and pepper - to taste |
Heat the bacon grease or oil, and add okra, onion, and garlic. Cook over medium heat until onions become translucent; add all remaining ingredients, turn heat down just a notch, and let simmer 30-45 minutes, stirring occasionally.
The idea is to get everything soft, kinda paste-like, without letting it dry out too much--you'll know when it's got the consistency you like. This is real good served on a bed of rice.
