Beet Soup Recipe - Cooking Index
| 1 | Beets | |
| Peeled - halved, sliced | ||
| 1 | Beet greens | |
| Washed and finely chopped | ||
| 3 | Celery - diced | |
| 1 tablespoon | 15ml | Lemon juice |
| Salt & pepper to taste | ||
| 1 | Onion - diced (large) | |
| 4 | Carrots - sliced | |
| 1 tablespoon | 15ml | Vinegar |
| 1 tablespoon | 15ml | Horseradish |
| 1 | Tomato soup |
Put vegetables in a large pot with water to cover. Add remaining ingredients and mix thoroughly. Simmer 2 - 2 1/2 hours, until beets and carrots are tender.
