Mushrooms Barcelona Recipe - Cooking Index
2 tablespoons | 30ml | Butter or margarine |
1 tablespoon | 15ml | Vegetable oil |
8 oz | 227g | Fresh mushrooms |
1/2 cup | 73g / 2.6oz | Chopped toasted walnuts |
2 tablespoons | 30ml | Dry sherry |
1 tablespoon | 15ml | Lemon juice |
1 teaspoon | 5ml | Grated orange or lemon peel |
2 tablespoons | 30ml | Chopped fresh parsley |
Salt - to taste |
Melt butter with oil in a frying pan. Add mushrooms; saute over medium heat until just tender.
Add walnuts, sherry, lemon juice and citrus peel; cook 1 minute.
Sprinkle with parsley; season with salt.
