Mozzarella, Zucchini And Anchovy Toasts

Recipe Ingredients

1 tablespoon 15mlOlive oil
4 tablespoons 60mlZucchini - trimmed and sliced (small)
2 tablespoons 30mlFinely chopped fresh parsley
4   Fresh Italian country bread - (large slices), 3/4 inch thick
12   Mozzarella cheese
8   Anchovy fillets - drained and chopped

Recipe Instructions

Preheat oven to 400F. Heat olive oil in large skillet over med-high heat. Add zucchini and parsley and saute until zucchini is tender, about 5 minutes. Remove from heat.

Place bread slices on large baking sheet. Bake until crisp, about 10 minutes. Arrange 3 slices mozzarella on each bread slice.

Top with zucchini, dividing equally. Sprinkle with anchovies. Return to oven and bake until cheese melts, about 5 minutes. Serve hot.
