Mozzarella, Zucchini And Anchovy Toasts Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
4 tablespoons | 60ml | Zucchini - trimmed and sliced (small) |
2 tablespoons | 30ml | Finely chopped fresh parsley |
4 | Fresh Italian country bread - (large slices), 3/4 inch thick | |
12 | Mozzarella cheese | |
8 | Anchovy fillets - drained and chopped |
Preheat oven to 400F. Heat olive oil in large skillet over med-high heat. Add zucchini and parsley and saute until zucchini is tender, about 5 minutes. Remove from heat.
Place bread slices on large baking sheet. Bake until crisp, about 10 minutes. Arrange 3 slices mozzarella on each bread slice.
Top with zucchini, dividing equally. Sprinkle with anchovies. Return to oven and bake until cheese melts, about 5 minutes. Serve hot.
