Marinated Shrimp

Recipe Ingredients

5   Water
1   Celery cut 1" slices
2 teaspoons 10mlPepper - divided
1 tablespoon 15mlSalt
1 tablespoon 15mlOnion--separate into rings (large)
  Lettuce leaves
1/4 cup 15g / 0.5ozChopped onion
1/2 cup 118mlLemon juice
1 1/2 cups 355mlApple cider vinegar
1 cup 198g / 7ozSugar
1 teaspoon 5mlPaprika
1   Salad oil - (38 oz.)
5 lbs 2270g / 80ozJumbo shrimp - unpeeled

Recipe Instructions

Combine water, celery, onion, lemon juice and 1/2 tsp pepper in Dutch oven; bring to boil. Add shrimp and return to boil. Cook for 5 minutes; drain shrimp and cool. Shell and devein shrimp.

Combine shrimp and remaining ingredients, except lettuce, in airtight plastic container. Refrigerate 1 week, shaking container twice each day. Drain shrimp, discarding marinade. Serve shrimp and onion rings in lettuce lined bowl.
