Marinated Black-Eyed Peas (Atlas) Recipe - Cooking Index
2 cups | 474ml | Cooked black-eyed peas |
1 cup | 237ml | Red bell pepper - cut into 1" (medium) |
Strips | ||
2 | Minced scallions | |
3 tablespoons | 45ml | Minced fresh parsley |
3 tablespoons | 45ml | Olive oil |
1 | Lemon - juice of | |
1 | Garlic clove - crushed | |
Salt and pepper | ||
Dark green lettuce leaves |
Combine all the ingredients except the lettuce in a mixing bowl. Cover and let stand in the fridge for an hour or so. Stir occasionally. Before serving, remove garlic. Line a shallow serving bowl with lettuce leaves and top with the pea mixture.
This recipe is better if prepared a day ahead. For real good luck, drop some coins into it before serving.
