Lime Chicken Shish Kabob Recipe - Cooking Index

2 | Limes - juice of | |
20 | Garlic - minced | |
1 tablespoon | 15ml | Low sodium soy sauce |
1 tablespoon | 15ml | Apple juice concentrate |
8 oz | 227g | Medium mushrooms |
1 | Red bell pepper - cut in 1" | |
Cubes | ||
16 | White pearl onions | |
1 | Green bell pepper - cut in 1" pieces | |
2 | Zucchini - cubed (small) |
Combine lime juice, garlic, soy sauce and apple juice and marinate the chicken in it in the refrigerator at least 2 hours, turning occasionally.
Alternate chicken and vegetables on skewers.
Grill or broil about 10 minutes, turning and basting with marinade.
