Recipe Ingredients

3/4 cup 177mlItalian black olives - pitted
1/4 cup 59mlCapers - drained
1/4 cup 59mlAnchovy fillets
1/4 cup 59mlExtra virgin olive oil
4 tablespoons 60mlLemon juice - fresh squeezed

Recipe Instructions

In food processor or blender, mix all ingredients together to obtain a smooth spread, about 10 seconds.

Serve this olive paste "peasant caviar" in a bowl as a side dish to be spread on rustic Italian bread for picnics, barbecues, or a buffet appetizer.

Chef's tip: to pit, place olive on a board and press with a knife blade.

The pit should easily be removed with your fingers.
