3/4 cup | 177ml | Italian black olives - pitted |
1/4 cup | 59ml | Capers - drained |
1/4 cup | 59ml | Anchovy fillets |
1/4 cup | 59ml | Extra virgin olive oil |
4 tablespoons | 60ml | Lemon juice - fresh squeezed |
In food processor or blender, mix all ingredients together to obtain a smooth spread, about 10 seconds.
Serve this olive paste "peasant caviar" in a bowl as a side dish to be spread on rustic Italian bread for picnics, barbecues, or a buffet appetizer.
Chef's tip: to pit, place olive on a board and press with a knife blade.
The pit should easily be removed with your fingers.
