Basil Marinated Tomatoes Recipe - Cooking Index
2 teaspoons | 10ml | Ripe tomatoes - sliced into 6 thick (large) slices (total) |
1 | Sized red onion - sliced into 6 (medium) slices | |
2 tablespoons | 30ml | Coarsely chopped fresh basil |
2 tablespoons | 30ml | Olive oil |
4 teaspoons | 20ml | Red wine vinegar |
1 teaspoon | 5ml | Sugar |
1/4 teaspoon | 1.3ml | Salt |
Place the tomato slices in a shallow dish. Top each tomato slice with an onion slice. In a small bowl, combine the remaining ingredients; stir until well blended, then drizzle over the tomatoes and onions. Cover and chill for 2 hours before serving.
NOTE: Serve as is or as a garden-fresh topping for grilled burgers.
