Bread slices - (good quality bread) | ||
Butter or margarine - softened | ||
Canned chopped green chiles | ||
Monterey jack cheese - sliced |
Remove crusts from bread slices and butter both sides. Cover one side with chiles and cheese slices; top with a second slice. Place sandwiches on a baking pan and cut them in quarters. Set aside until ready to bake. When almost ready to serve, place the tiny sandwiches in the upper level of a preheated 425F oven; bake about 10 minutes, or until well toasted. If some of the tops slide off during the baking, no need to worry; just replace them as you arrange them on your serving tray.
These sandwiches can be assembled in the morning, covered with plastic wrap, and kept at room temperature. They can also be make the day before, covered with plastic and refrigerated, but bring them to room temperature before baking.
