4 tablespoons | 60ml | Fresh parsley - minced |
1/2 cup | 118ml | Sliced fresh mushrooms |
3 tablespoons | 45ml | Olive oil |
6 cups | 1422ml | Shredded fresh zucchini |
Sharp cheddar cheese - grated | ||
6 | Eggs - beaten (large) | |
1 cup | 146g / 5.1oz | Grated parmesan cheese |
1 teaspoon | 5ml | Marjoram |
Salt and pepper - to taste | ||
Toasted breadcrumbs |
Saute onion, garlic, parsley and mushrooms in oil. Add zucchini and saute until barely wilted.
Mix egg, cheese, marjoram, salt and pepper; add zucchini mixture to mixing bowl.
Mix well and pour into a well-greased 9x13 inch glass baking dish. Sprinkle with breadcrumbs and cheese.
Bake at 350F for about 30 minutes, or until knife comes out clean. Cut into squares.
Makes 24 appetizers or 12 snacks.
May be served warm or cold.
