| Vegetable oil | ||
| 2 cups | 292g / 10oz | Shredded Monterey jack cheese |
| 2 cups | 292g / 10oz | Diced cooked ham |
| 1/4 cup | 36g / 1.3oz | Diced green chiles |
| Freshly ground black pepper | ||
| 1 | Lime | |
| 16 | Spinach leaves - (up to 24) | |
| Favorite salsa - for accompaniment | ||
| Guacamole - if desired | ||
| Sour cream - if desired |
Brush oil on one side of each tortilla. On 1/2 of unoiled side, sprinkle 1/4 cup cheese, 1/4 cup ham and 2 teaspoons green chiles. Season with pepper; drizzle with lime juice.
Top with 2 or 3 spinach leaves. Fold tortilla in half. In a large skillet, cook both sides over low heat until golden brown.
Cut into 3 wedges; keep warm while cooking the remaining tortillas.
Serve with salsa, guacamole and sour cream, if desired.
Makes 24 appetizer servings.
