Ham And Spinach Quesadillas

Recipe Ingredients

8   Flour tortillas
  Vegetable oil
2 cups 292g / 10ozShredded Monterey jack cheese
2 cups 292g / 10ozDiced cooked ham
1/4 cup 36g / 1.3ozDiced green chiles
  Freshly ground black pepper
1   Lime
16   Spinach leaves - (up to 24)
  Favorite salsa - for accompaniment
  Guacamole - if desired
  Sour cream - if desired

Recipe Instructions

Brush oil on one side of each tortilla. On 1/2 of unoiled side, sprinkle 1/4 cup cheese, 1/4 cup ham and 2 teaspoons green chiles. Season with pepper; drizzle with lime juice.

Top with 2 or 3 spinach leaves. Fold tortilla in half. In a large skillet, cook both sides over low heat until golden brown.

Cut into 3 wedges; keep warm while cooking the remaining tortillas.

Serve with salsa, guacamole and sour cream, if desired.

Makes 24 appetizer servings.
