| 9 tablespoons | 135ml | Fresh lemon juice |
| 1 tablespoon | 15ml | Tomato - cut into 1" cubes (large) |
| 1 tablespoon | 15ml | Yellow onion - minced (large) |
| 1 | Celery stalk - minced | |
| 4 | Green onions - minced | |
| 1 | Bell pepper - seeded and minced | |
| 4 | Garlic - finely minced | |
| 3 | Fresh hot chilies - seeded and minced (small) | |
| 1/4 cup | 23g / 0.8oz | Minced fresh parsley |
| 1 teaspoon | 5ml | Finely minced fresh cilantro |
| 1 teaspoon | 5ml | Sugar |
| 1/8 teaspoon | 0.6ml | Ground cumin |
| 1/4 teaspoon | 1.3ml | Coarsely ground black pepper |
| 1/3 cup | 78ml | Vegetable oil |
| Salt and cayenne or Tabasco - to taste |
Scoop the avocados into a bowl and mash thoroughly with a fork. Add the lemon juice a bit at a time, tasting after each addition, and stir well. Add all the remaining ingredients and mix.
