Baked Spinach Casserole

Recipe Ingredients

3 tablespoons 45mlButter
2 cups 474mlLight cream
3 tablespoons 45mlOnion - grated
2   Frozen spinach - thawed and drained
1 lb 454g / 16ozMushrooms - chopped
3 tablespoons 45mlGruyere or swiss cheese - grated
3 tablespoons 45mlFlour
2 teaspoons 10mlSalt
1/4 teaspoon 1.3mlNutmeg
1/4 teaspoon 1.3mlWhite pepper

Recipe Instructions

Preheat oven to 325 degrees. Saute' onions and mushrooms in butter for 5 minutes. Blend in flour, salt, pepper and nutmeg. Gradually add cream, stirring to boiling point. Taste for seasoning.

In buttered casserole, spread half the spinach; cover with half of the mushroom sauce, then repeat. Sprinkle with the grated cheese. Set in pan of hot water.
