Baked Spinach Casserole Recipe - Cooking Index
3 tablespoons | 45ml | Butter |
2 cups | 474ml | Light cream |
3 tablespoons | 45ml | Onion - grated |
2 | Frozen spinach - thawed and drained | |
1 lb | 454g / 16oz | Mushrooms - chopped |
3 tablespoons | 45ml | Gruyere or swiss cheese - grated |
3 tablespoons | 45ml | Flour |
2 teaspoons | 10ml | Salt |
1/4 teaspoon | 1.3ml | Nutmeg |
1/4 teaspoon | 1.3ml | White pepper |
Preheat oven to 325 degrees. Saute' onions and mushrooms in butter for 5 minutes. Blend in flour, salt, pepper and nutmeg. Gradually add cream, stirring to boiling point. Taste for seasoning.
In buttered casserole, spread half the spinach; cover with half of the mushroom sauce, then repeat. Sprinkle with the grated cheese. Set in pan of hot water.
