Green Papaya Salad Recipe - Cooking Index
Dressing | ||
2 teaspoons | 10ml | Garlic chopped |
2 | Dried red chilies - soaked, - seeded and chopped | |
1 tablespoon | 15ml | Sugar |
2 tablespoons | 30ml | Soy sauce |
1 | Lemon - juiced | |
3 cups | 711ml | Papaya - unripe, grated |
1/2 lb | 227g / 8oz | Green beans - julienne |
Garnish | ||
1/4 lb | 113g / 4oz | Cherry tomatoes |
4 tablespoons | 60ml | Peanuts - chopped |
Cabbage leaves - torn |
In a mortar, pound the garlic, chilies and sugar into a paste. Mix in the soy sauce and lemon juice.
Mix the papaya, beans and refrigerate until ready to serve.
At serving time, pour on the dressing and sprinkle the peanuts and cherry tomatoes over the top.
Serve with chunks of raw cabbage leaves.
