Gorgonzola Logs Recipe - Cooking Index
6 oz | 170g | Gorgonzola cheese - softened |
1/2 cup | 99g / 3.5oz | Butter - softened |
10 oz | 284g | Shredded extra-sharp cheddar cheese |
2 tablespoons | 30ml | Brandy |
1 teaspoon | 5ml | Worcestershire sauce |
2/3 cup | 97g / 3.4oz | Chopped walnuts |
1/3 cup | 48g / 1.7oz | Chopped fresh parsley |
Beat Gorgonzola and butter until light and fluffy in a large bowl with an electric mixer. Stir in cheddar, brandy and Worcestershire.
Divide mixture in half. Turn each half onto waxed paper and roll, shaping into a long 1-inch in diameter. Twist ends of waxed paper closed. Refrigerate several hours until firm.
Combine nuts and parsley. Roll cheese logs in mixture, pressing firmly. Roll up in waxed paper; refrigerate. Soften slightly before serving.
Makes 2 logs. Can be frozen. Can also shape into a ball.
