Baked Italian Zuchinni Recipe - Cooking Index
2 teaspoons | 10ml | Zucchini sliced 1/2" (medium) |
1 teaspoon | 5ml | Onion - sliced (medium) |
1 teaspoon | 5ml | Oregano |
1 | Tomato - sliced (optional) | |
1/2 teaspoon | 2.5ml | Dried basil |
1 pinch | Salt | |
1 pinch | Pepper | |
2 cups | 474ml | Tomato sauce |
1 cup | 198g / 7oz | Cubed bread - buttered * |
1/2 cup | 73g / 2.6oz | Grated parmesan cheese |
Use 1/2 cup bread crumbs instead of cubed bread * * Layer in a one quart baking dish, zucchini, onion and tomato, if desired seasoning each layer with oregano, pepper, basil and salt.
Pour tomato sauce to barely cover vegetables. Cover and bake at 350F for 45 minutes. Uncover and top with bread cubes or crumbs and grated cheese. Bake uncovered for 10 minutes.
