Fruit Cheese Log Recipe - Cooking Index
1/2 cup | 118ml | Del Monte dried apricots |
1 cup | 237ml | Water |
1 lb | 454g / 16oz | Monterey jack cheese - shredded |
1 | Cream cheese - softened | |
1/3 cup | 78ml | Milk |
1 teaspoon | 5ml | Poppy seeds |
1/2 teaspoon | 2.5ml | Seasoned salt |
1/3 cup | 53g / 1.9oz | Del Monte golden seedless raisins |
1/4 cup | 59ml | Pitted dates - snipped |
3/4 cup | 109g / 3.8oz | Chopped walnuts |
Crackers - for accompaniment |
Soak apricots in water for two hours; drain and chop. Blend cheeses.
Add milk, poppy seeds and salt; mix well. Fold in fruit; mix well.
Turn out on foil; shape into a log-type roll.
Wrap securely in foil; chill until firm. Roll in nuts before serving.
Serve with crackers.
Yield: 1 log, approximately 2 pounds.
Variation: Substitute 1/3 cup sherry for milk.
