Fried Marinated Onions

Recipe Ingredients

1 lb 454g / 16ozPearl onions - peeled
2 cups 474mlWhite vinegar
1 cup 237mlWater
2   Bay leaves
2 teaspoons 10mlDill seeds
2 teaspoons 10mlSugar
  Oil for frying
1/2 cup 31g / 1.1ozA/p flour
1/2 cup 118mlToasted whole wheat breadcrumb
2   Egg yolk - beaten, to 3

Recipe Instructions

Combine onions, vinegar, water, bay leaves, dill seeds, and sugar in med saucepan and cook over med high heat until onions are tender, 5-10 minutes. Let cool.

Transfer to bowl, cover tightly and refrigerate 48 HOURS. Remove onions from marinade and drain on paper towels. Pour oil into lg skillet to 1" depth. Place over med high heat.

Meanwhile, combine flour and crumbs in flat dish. Dip onions into egg yolds, then roll in flour mixture, covering completely. When oil is hot, add onions to skillet and fry until brown and crisp. Drain on paper towels.

Serve immediately.
