Fresh Corn And Sausage Fritters Recipe - Cooking Index
1 cup | 62g / 2.2oz | All-purpose flour - sifted |
1 teaspoon | 5ml | Baking powder |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Pepper |
1/4 teaspoon | 1.3ml | Paprika |
1 cup | 237ml | Sausage - cooked and crumbled |
1 cup | 62g / 2.2oz | Fresh corn off the cob |
2 | Egg yolks - beaten | |
2 tablespoons | 30ml | Milk |
2 | Egg whites - beaten stiff | |
Oil - for frying |
Sift flour, baking powder, and spices together in a mixing bowl. Add sausage, corn, egg yolks, and milk; mix until blended. Fold in stiffly beaten egg whites.
Drop by heaping teaspoonfuls into oil heated to 360 - 365F. Cook 3 to 5 minutes, turning to brown on all sides. Drain on paper towels.
Makes about 24 fritters
