Baked Cheese Tomatoes Recipe - Cooking Index
4 teaspoons | 20ml | Firm tomatoes (large) |
2 cups | 292g / 10oz | Grated mild cheddar cheese |
1 cup | 237ml | Toasted bread cubes - (2 slices) |
2 teaspoons | 10ml | Basil |
1/2 teaspoon | 2.5ml | Salt |
1 tablespoon | 15ml | Parsley flakes |
1/2 cup | 73g / 2.6oz | Chopped cashews |
2 tablespoons | 30ml | Butter - melted |
1/2 cup | 31g / 1.1oz | Finely chopped onion |
1/2 cup | 31g / 1.1oz | Tomato pulp |
Preheat oven to 350F. Core tomatoes and scoop out pulp, leaving sturdy shell. Sprinkle lightly with salt. Combine remaining ingredients. Fill tomato shells with cheese mixture. Bake, covered, for 30 minutes, or until cheese melts.
For variation: Tomatoes can be cooked on a grill for 15-30 minutes depending on fire.
