Basic Pilaf Recipe - Cooking Index
1 tablespoon | 15ml | Oil |
1/2 cup | 31g / 1.1oz | Chopped onion |
6 oz | 170g | Raw chicken breast half - chopped fine |
(about 3/4 cup chopped chicken) | ||
1 cup | 160g / 5.6oz | Raw rice |
1 | Bay leaf | |
3 cups | 711ml | Chicken stock |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Heat oil in a small saucepan. Add onion and cook until translucent. Add chicken and cook for 4 minutes. Add rice and bay leaf, stir to coat and add stock. Bring to a boil, reduce heat to a simmer and cover. Cook for 15 minutes or until tender. Season with salt and pepper, fluff rice with a fork and serve.
This recipe yields 3 to 4 servings.
