Filo Dough Triangles And Fillings

2   Filo pastry leaves - (2 pounds)
1 1/2 lbs 681g / 24ozUnsalted butter - melted and cooled
3   Filling - (see below)
  Roquefort Leek Filling
1/2 cup 46g / 1.6ozMinced leeks - (about 2 leeks)

  Three Cheese Filling With Pepperoni
1/2 cup 73g / 2.6ozRicotta cheese
3 tablespoons 45mlGrated mozzarella cheese
3 tablespoons 45mlFreshly grated parmesan cheese
1/4 cup 23g / 0.8ozMinced pepperoni
1   Egg yolk
  Salt and pepper - if desired
  Crab Filling
8 oz 227gFresh crab meat
3 tablespoons 45mlButter
3 tablespoons 45mlFinely chopped shallots

1 tablespoon 15mlDijon mustard

  Curried Lamb Filling
8 oz 227gLean boneless lamb
3 tablespoons 45mlButter
1/2 cup 31g / 1.1ozFinely chopped onion
1   Garlic - minced
1 teaspoon 5mlCurry powder - (up to 2)
1/4 teaspoon 1.3mlGround coriander
1   Cayenne
  Salt and pepper - if desired

Recipe Instructions

To make Filo Triangles: Melt the butter. Take a filo leaf, lay it out flat, and brush it with melted butter. Put another leaf on top of this one and butter it as well. Cut this into four long strips (the dough is usually 18" x 24", so when you cut it, you should get four strips, 4 1/2" x 24"). For each strip, put a spoonful of filling at the top, and then flag-fold the strip into a triangle with the filling inside. Repeat until you run out of either the filling or the filo leaves.

Slash the top of the triangles, being careful not to cut through to the filling. Bake at 450F for about 20 to 25 minutes. Basically you just want to make them golden brown.

To make Roquefort-Leek Filling: Cut the green tops off the leeks; discard. Quarter the leeks down their long axis, and rinse well in a pot of water. Now mince finely. Saute in the butter until tender. Crumble the Roquefort and mix in; stir in the ricotta. If you really feel that you *must* add a bit of salt, and you don't mind that is's going to ruin your blood pressure, besides clogging your arteries with the cholesterol from the butter and cheeses, then add some. Same with the pepper.

Mix well. Fills about 24 to 30 triangles.

To make Three-Cheese Filling with Pepperoni: Mix everything together. Fills about 24 to 30 triangles.

To make Crab Filling: Melt butter, saute shallots until soft but not browned. Add the crab and sherry; saute for 30 seconds. Stir in the rest, then let cool. Fills about 24 to 30 triangles.

To make Curried Lamb Filling: Chop lamb into 1/4 inch pieces. Melt 2 tablespoons butter in a pan and brown lamb over medium-high heat. Move lamb to a bowl. Saute the onion, garlic, curry and coriander until soft. Stir in the lamb and season to taste with salt, pepper and cayenne. Fills about 24 to 30 triangles.
