Cucumber Relish Recipe - Cooking Index
2 tablespoons | 30ml | Vinegar |
2 tablespoons | 30ml | Water |
1 tablespoon | 15ml | Sugar |
1/4 teaspoon | 1.3ml | Salt |
1 teaspoon | 5ml | Cucumber (medium) |
1 teaspoon | 5ml | Onion - finely chopped (small) |
1 teaspoon | 5ml | Red chili pepper - seeded, in thin (small) |

Stir together vinegar water, sugar and salt in a bowl until sugar is dissolved.
Peel cucumber and cut in half lengthwise. Scoop out seeds. Thinly slice cucumber.
Add cucumber, onion and chili to vinegar mixture. Cover and chill up to 3 hours.
Makes 1 cup.
