3 | Cream cheese - softened (8oz) | |
1 | Crushed pineapple; - drained | |
1 | Pimientos - drained | |
1 | Bell pepper - chopped fine | |
Pecans - chopped |
Mix by hand the cream cheese, pimiento and pineapple until thoroughly blended.
Add the bell pepper and form the mixture into a ball.
Put in refrigerator for 1 to 2 hours to firm up. Reshape if necessary.
Roll in chopped pecans and place on a shallow platter. Serve with assorted crackers.
