1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 cup | 73g / 2.6oz | Chopped green bell pepper |
Vegetable oil | ||
2 cups | 292g / 10oz | Shredded cheddar cheese |
2 | Crab meat - drained and flaked | |
1 | Mushrooms - drained and chopped | |
16 | Ritz crackers, crushed | |
8 | Eggs - beaten |
In a large saucepan saute onion and green pepper in a small amount of oil until tender.
Remove from heat and add cheese, crab meat, mushrooms and cracker crumbs; toss well. Stir in beaten eggs.
Spoon mixture into greased miniature tart tins.
Bake in a medium-hot oven for 15 minutes or until done.
Makes 3 to 4 dozen.
