As for me, I turn to a friend's grandmother, Lydia Nix Massey of Commerce, Ga., for my cornbread fixing.
She called for a half teaspoon salt, rounded tablespoon baking powder, one and a half cups corn meal, a half cup flour (important), an egg (so there), milk, water, shortening (bacon drippings, oil or melted butter).
You mix the dry, add the wet until thin and then bake in a pre-heated (and greased) iron skillet until brown.
And, I add honey or molasses. So deport me.
