3 | Tomatoes - diced (small) | |
1 | Cucumber - sliced (medium) | |
1 | Green bell pepper - sliced (small) | |
1 | Onion - cut into rings (small) | |
6 | Radishes - thinly sliced | |
1/2 cup | 73g / 2.6oz | Parsley - chopped |
1/3 cup | 78ml | Olive oil |
3 tablespoons | 45ml | Lemon juice |
1 | Garlic clove - crushed | |
Salt and pepper | ||
1 teaspoon | 5ml | Mint |
Pita halves |
Combine lettuce, tomatoes, cucumber, pepper, onion, radishes and parsley in a salad bowl.
Whisk together olive oil, lemon juice, garlic, salt, pepper and mint.
Pour over salad and toss to coat.
Serve immediately with warm pita halves.
